Tasty Tuesday: Egg Bake

Hey there! I want to share an easy breakfast recipe with you. I made this last week and then ate it the rest of the week! I love having everything ready for breakfasts because let’s face it, I’m a littttttle sleepy in the morning…. 😉

Ingredients
  1. 6 Eggs
  2. 6 Turkey Sausage Links, cubed
  3. 2-3 Medium Red Potatoes, cubed
  4. 1/2 Cup Mozzarella (or cheddar, I used both!)
  5. Salt & Pepper & Paprika to taste
Instructions
  1. Preheat over to 350, chop potatoes and sausage and layer it in a 9x9 pan. Mix eggs, add salt & pepper, & paprika. Stir in half the cheese. Pour over potatoes & sausage. Top with remaining cheese. Put in the over for 20-30 minutes, until center is baked through. Enjoy!

Tasty Tuesday: Crockpot Chicken Tortilla Soup

I have a slight crockpot addiction. I would make EVERYTHING in the crockpot if I could. (Is that a challenge? I might accept!) This recipe is one of my favorites to do in the crockpot- so simple and delicious! :)

Ingredients
  1. -3-4 Chicken Breasts
  2. -1/4 teaspoon crushed red pepper flakes
  3. -1/4 teaspoon dried oregano
  4. -1/2 teaspoon paprika
  5. -1 1/2 teaspoons ground cumin
  6. -1 teaspoon sea salt
  7. -1 teaspoon black pepper
  8. -32 oz Low Sodium Chicken Broth
  9. -One small can green Chile’s (you can also use the one with tomatoes and chile’s)
  10. -1 can sweet corn
  11. -1 can can black beans (drained) (optional)
Instructions
  1. Cook the chicken on high with seasonings listed, and enough of the broth to cover chicken on high for 4 hours OR on low for 6-8. Once cooked through, shred the chicken and add the rest of the ingredients. Let it heat up to you liking. I sometimes cook the chicken during the day while I'm at work and then add the rest to make it the soup and let it heat up for a couple more hours.
  2. Top with a dollop of light sour cream, cheddar cheese and tortilla strips. YUM!

This has to be one of my most FAVORITE recipes ever. My mom made them for our Christmas dinner this year, and since then I have been making them often! I’ve even made extras and used them for my lunches during the week.

Ingredients
  1. 2-3 Sweet Potatoes (depending on how many you think you need)
  2. 2 Tbsp Honey
  3. ⅓ Cup of Pecans
  4. Cinnamon
Instructions
  1. Slice Sweet potatoes, remove skin. Boil for 10-15 minutes or until soft (check with a fork).
  2. Once soft, place in a greased baking dish
  3. Drizzle with honey (approx 2tbsp) and sprinkle with the chopped pecans & Cinnamon.
  4. Bake for about 20-25 minutes at 350 or until the feel done.

 Hi there! Here in Maryland we are having a little bit of a snow day today! That’s why this recipe couldn’t be more perfect for today. Doesn’t a crockpot full of chili sound perfect on a day like today? This recipe turned out perfect for us today!

Ingredients
  1. Turkey Chili
Ingredients
  1. 1 lb lean ground turkey
  2. 1 medium yellow onion diced
  3. 1 tsp Cumin powder
  4. 1/2 tsp Chili Powder
  5. 1/2 tsp Garlic Powder
  6. 1/2 tsp Dried Oregano
  7. Salt and Pepper to taste
  8. 15 oz can black beans, drained and rinsed
  9. 1 can diced tomatoes & chile ( I used Rotel)
  10. 1 Small can corn
  11. 30 oz of tomato sauce (2 cans- I used Hunts 100% natural tomato sauce)
Instructions
  1. In a large skillet over medium/high heat, add 1 Tbsp olive oil and cook 1 lb ground turkey until cooked through. Add onion and all of your spices. Transfer meat to your crock pot. Add black beans, kidney beans, diced tomatoes & chiles and corn. Add tomato sauce and stir to combine. Cook in crock pot for 4-6 hours on low. Add a little cheese to the top and enjoy!

10 Day Challenge

You can do anything for 10 days right? Well- that’s what I’m thinking.

After a couple weeks of not so great eating and a crazy schedule- I totally feel out of whack with my eating and workout schedule. I came up with this crazy idea to complete a 10 day challenge of easy, healthy meals, and workouts. I also had this idea of opening it up to ALL of you so that we can be a support group!

I would run this little group through Facebook so we can interact and make it easy to connect! (Of course if you don’t have Facebook, you can be updated through email! Or make a Facebook only for the group- I won’t tell!)

Basically what would happen- the challenge is set to start February 9th. This weekend I would send you a grocery list so you could be prepared for the recipes that I’ll post for the week. Don’t worry-I’m not a gourmet chef so my meals will be simple. I like to use the crockpot a lot and simple side dishes and I have other things I can share. If you are participating I would love for you to add your own healthy meals as well. It’s all about collaboration! :)

Motivation Monday

I can’t believe it’s the end of January! Didn’t it feel like we just started the new year and now here we are, almost February. One of the biggest questions is if your goals (or resolutions) are still in tact?

Errrr…it can be a easy to start to slowly let these things slip away from us isn’t it? I have fortunately been doing well with my business and blogging and I owe it a lot to working a little at a time.

—>Every week I write down (at least) 3 things I want to complete for the week in my planner. I then do something each day to help me stay organized on track. It’s really been a big help to me on accomplishing small things that will help me personally, and with my business.

For example my goals this week are:

1. Finish my meal planning document for clients.

2. Adjust any bootcamp plans that are needed (i.e., weekly scheduled workouts, create new cardio sessions).

3. Film more workouts for my boot camp and for instagram. 

I’ve been lucky that these little steps are helping me stay focuses and have been helping me to accomplish goals for the week. I was never good about writing things down before, but I’ve found it to be so helpful! Plus- who doesn’t love checking things off their list?
